This is a quick and frugal meal. It only takes about 20 minutes to prepare. Since the chicken is pounded into cutlets it stretches a lot further. I cut my chicken breast in half and then cut the thickest end in half horizontally, which gave me 3 nice cutlets. If the breast are smaller or the flat frozen ones, just cut in half. This recipe calls for 1/4 cup vodka but you could substitute chicken broth and I don’t think it would make that big a difference. I would suggest having everything chopped, measured and ready. Once you start cooking it goes fast.
